CARROT CAKE TRUFFLES
My friend Marta brought a version of these over for a ladies potluck we do once a month. They are a decadent treat that is packed full of whole foods & nutrients. Quick & fun to make. Great recipe to make with kids! ingredients 1/2 c chopped carrots 1/2 c chopped figs, dates, prunes, raisins 1/4 c pumpkin seeds 2 tbs shredded coconut 2 tbs oats 1/2 tsp cinnamon
directions 1) Chop carrots & dried fruit (so it's easier for the food processor to blend) 2) Put all ingredients in a food processor and blend until everything is married together (chunks are ok) 3) A couple tablespoons at a time, use hands to roll the 'dough' into balls. 4) Place in fridge until ready to eat 5) Devour!
